Yellow onions are pictured, Jan. 9, 2017, in Coden, Alabama. Yellow onions are a variety of onion with a whitish, yellow inside and yellow, brown, or reddish-brown, papery skin. They have a strong, pungent flavor due to the high amount of sulphur they contain. Yellow onions are grown between spring and fall but are available throughout the year due to their high storage tolerance. They are the most commonly grown onions in northern Europe and make up 90 percent of the onions grown in the United States. When used in cooking, they add a strong, complex flavor and become sticky and sweet when caramelized. The onion plant has been cultivated and selectively bred for more than 7,000 years. Onions were revered by the Egyptians and were even used to adorn the body, especially the eye sockets, in Egyptian funerals. Bulb onions were among the first crops planted in America by the Pilgrims.
